I'm Coming Back Easy Breakfast Oatmeal Bake

I have been debating how to make my come back to blogging. 
Do I post a sappy story about trials and tribulations, do I give you  a run down on all the things going on, or do I just JUMP RIGHT IN!! 
Well I have decided to jump back in!  I was searching Pinterest (LOVE THAT SITE!!!) and came across a recipe for Blueberry Oatmeal Bake on So, How's This Taste?  It looked Yummy!

 But I knew my little men wouldn't eat the cooked blueberries, or the banana in her version.  Plus hers called for eggs and milk, and I wanted to make something I could eat!!!  So here is my version, and I think it turned out pretty darn good!!

Apple Raisin Baked Oatmeal



makes 6 servings



Ingredients:

2 cup old-fashioned rolled oats

3/4 cup Whole Wheat Flour

1/4 cup each hemp seed and flax seed
1 tsp. baking powder

1 tsp. each ground cinnamon and Nutmeg

Pinch of salt

1/4 cup water

2 cup milk (I used almond)

2 tbsp. vegan margarine

2 tsp. vanilla extract

1 Apple thinly sliced

1 cup raisins, blueberries or raspberries, fresh or frozen, divided

Directions:

1. Preheat the oven to 375F.

2. Lightly grease a 2-quart baking dish. In a medium bowl, mix the oats, hemp, flax, flour baking powder, cinnamon, nutmeg, raisins and salt. Stir to combine. In a liquid measuring cup, combine the water, milk, butter, and vanilla.

3. Spread the sliced apples in a single layer over the bottom of the baking dish. Sprinkle the dry oat mixture over the fruit in an even layer. Pour the liquid ingredients evenly over the oats.

4. Bake for 35-40 minutes, until the top is browned and the oats have set. Let cool 10 minutes before serving.
