Baked Pasta and "Meatballs"

managed to get a picture of this one before the greedy, hungry lil fingers that live with me devoured it. This isn't a New concept for dinner by any means, but I had to tweak the recipes I found to make this work for whole wheat and brown rice pastas. With white pasta you can put the uncooked pasta right in your dish, mix everything up and bake. It turns out great, but when you use Brown rice or whole wheat pasta they are still crunchy.... Yuck!  So this is how you get it right.....

Ingredients

2 fresh chopped tomatoes, or canned
1 diced onion
1 garlic diced
1 red Sheppard pepper diced
1 package of whole wheat pasta
1 jar of you favorite tomato basil sause
1 package of meatless meatballs
2 handfuls cheesy shreds

Steps

Cook the pasta according to the directions until it is al dente
Combine the tomatoes, onion, pepper sauce and meatless balls with your pasta in a casserole dish.
Top with "cheesy" shreds.
Bake covered at 350 for 1 hour.  Remove cover and bake until all the cheesy shreds are melted and yummy.
Serve and Enjoy!
