We are back to routine with back to school. The boys are in Hockey too. Between homework, hockey practices, and work life has been crazy! But who's isn't right?
I have been compiling a bunch of easy make ahead dinner ideas, and simple on the run snacks. It is my plan to share these with you over the next couple days.
Today I want to share with you a really easy crock pot recipe. I found the original on Best Recipes Ever, (http://www.cbc.ca/bestrecipes/2012/04tagine_of_beef_with_prunes-mobile.html) then changed it up to work for my family, and work in my crock pot.
Here's what I did.
1 can black beans
1/2 tsp (2 mL) salt
4 onions, quartered
4 garlic cloves, sliced
6 large carrots, chopped
2 celery stalk, sliced
2 tsp (10 mL) ground cumin
1 tsp (5 mL) coriander
1 tsp (5 mL) paprika
1/4 tsp (1 mL) cinnamon
1/4 tsp (1 mL) cayenne pepper
2-1/2 cups (625 mL) vegetable stock
1 can tomato paste
1 tbsp (15 mL) red wine vinegar
1 orange
2 cups (500 mL) pitted prunes
1/4 cup (60 mL) chopped parsley
1/4 cup (60 mL) green onions
Add all ingredients to crock pot except orange, prunes parsley and green onions.
Cut off 2 long strips of orange rind; add to pan. Squeeze juice from orange to make 1/3 cup (75 mL); add to pot. Set crock pot to high for 4 hours, then low for remaining time until dinner.
Add prunes; simmer for 30 minutes. Serve sprinkled with parsley and green onion.
