Ingredients
- 1 cup rolled oats
- 1/2 cup rolled spelt flakes
- 1/2 cup rolled barley flakes
- 1/4 cup unsweetened coconut
- 1/4 cup walnuts
- 1 scoop whey powder
- 1/2 tsp each baking soda and baking powder
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1/2 cup cottage cheese (or ricotta cheese)
- 1 banana cut into chunks
- 1/2 cup unsweetened apple sauce
- 1 whole egg
- 16 oz egg whites
- 1 tsp vanilla extract
- Preheat Oven to 350.
- In a food processor pulse oats, spelt, and barley flakes until they are like a whole wheat flour
- add remanding dry ingredients and blend
- add remaining ingredients and pulse until mixture come together
- poor batter into silicon muffin tins
- bake for 20 to 25 mins.
- Makes 12 to 15 muffins

- These freeze really well, so double the batch and put some in the freezer for next week too.
