RECIPE - Clean Protien Muffins!


Ingredients
  • 1 cup rolled oats
  • 1/2 cup rolled spelt flakes
  • 1/2 cup rolled barley flakes
  • 1/4 cup unsweetened coconut
  • 1/4 cup walnuts
  • 1 scoop whey powder
  • 1/2 tsp each baking soda and baking powder
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/2 cup cottage cheese (or ricotta cheese)
  • 1 banana cut into chunks
  • 1/2 cup unsweetened apple sauce
  • 1 whole egg
  • 16 oz egg whites
  • 1 tsp vanilla extract
Steps
  1. Preheat Oven to 350.
  2. In a food processor pulse oats, spelt, and barley flakes until they are like a whole wheat flour
  3. add remanding dry ingredients and blend
  4. add remaining ingredients and pulse until mixture come together
  5. poor batter into silicon muffin tins
  6. bake for 20 to 25 mins.
  7. Makes 12 to 15 muffins

  • These freeze really well, so double the batch and put some in the freezer for next week too.
