To Top it all Off.....

Spring Mix Starter

Spring is here! You know what that means?  No more carbo heavy comfort foods, it is time for some beautiful salads!  I am a huge fan of using the boxes of Spring mix and Baby Spinach you find at the grocery store and topping them with all kinds of different things.  It is fun to get creative and build new types of salads and dressings.  Lets all share our FAV toppings, here are my top 3 right now.

  • Chopped green onion, crumbled goat milk feta, dried cranberries, diced cucumbers, apple slices, roasted red peppers,  shredded carrots, natural walnuts, and a simple Olive oil and Balsamic vinegar dressing
  • Roasted and cooled peppers, eggplant and zucchini, red onion, roasted chicken breast,and a drizzle of omega oil.
  •  Sliced strawberries, whole bblackberries, chopped green onion, sliced almonds, pearl bococinis that have been marinaded in the olive oil and red wine vinegar dressing.
Bring on summer and all the light and fresh foods!
