The great allergy DEBATE!

SO, the great classroom allergy debate! I have had a lot of "fun" with this one. Remember last year when my son had his lunch confiscated because of weed, o sorry it was just kiwi. My bad! Or how about the times the school has allowed TIMBITS, but not home baked goodness!?! The crazyness around all this allergy stuff can get pretty out of hand. I refuse to send my kids with "allergy safe" chemically preserved, sugar filled cookies, cakes and just plain JUNK! So this year, if need be, I will send the recipes to school with the baked goods. Take for example todays doublpe duty recipe for banana muffins / banana raison oatmeal soft baked cookies. There is no dairy, eggs, nuts, KIWI, sugar, or chemicals! Just plain yummy nummy goodness!

Ingredients
* 4 cups whole wheat flour
* 2 tbsp agave syrup
* 4 tsp baking powder
* 2 tsp baking soda
* 1 tsp cinnamon
* 1 tsp nutmeg
* 1/2 tsp salt
* 4 to 6 smashed banana, depends on how much moisture you like.
* 1 cup unsweetened applesause (if you have any from your apple picking, fresh made is best)
* 2/3 cup veg oil

STEPS
Preheat oven to 350 degrees
Mix dry ingredients in one bowl, and wet in another
Fold dry into wet, don't overmix.
Spoon half the batter into lined muffin tins (I did 18 muffins)
With remaining batter, fold in 1 cup rolled oats (rolled spelt flakes work too), and 1 cup raisons (or any dry fruit of choice)
Drop batter onto lined cookie sheet.
Bake for 15 to 20 mins.
Cool and enjoy

These freeze really well too, that way you have snacks for the entire week.
